Vegetarian Sunday RoastThis particular meal was made with extra firm tofu. Marinate the tofu in a mixture of olive oil, maple syrup, paprika and black pepper and let this stand for at least an hour in your refrigerator. Once it is nicely marinated you can go ahead and dredge the tofu in some seasoned flour then fry until golden brown. For the gravy you will need 1 small onion chopped along with 3 cloves of garlic and a tbsp of olive oil. Cook these together until they are soft then add ¼ cup of flour and 2 tbsp of margarine to make a white sauce. Add just a splash of red wine and 2 cups vegetable stock and mix so no lumps form. Next up is some mashed potatoes with a side of green beans and carrots to ensure that you get one of the most nutritionally complete vegetarian meals for Sunday dinner. Peel potatoes and cut into quarters and boil in a pot with some salted water. When the potatoes are cooked you can then drain them and in a microwave safe bowl heat 1 ½ cup milk of your choice with 1 tbsp margarine just till warm and butter almost melted. Then you can mash the potatoes with your hand, a mixer or a food processor and pour the milk mixture over them. Add some salt and pepper to taste as well as ¼ tsp of garlic and 1 tbsp chives if you wish.

For the green beans and carrots you can quickly steam them with some salt and pepper then you can toss them with some margarine or some lemon juice and you are all ready to serve this meal
