Instant High Protein Vegetarian Recipes

In the contemporary lifestyle everything has to be almost instantaneous. Some (including my friend!!) may think it is impossible to have instant healthy high protein vegetarian recipes. In fact that’s the reason I am writing this post, she was blown away when I put together an instantaneous gourmet style tufu wraps for for lunch when she visited one Saturday afternoon. Part of the reason may also have been that I keep certain things handy in the frig and pantry. For example some salad items and tofu. We all know tofu is one of the richest sources of protein and perfect for vegetarians. Here’s the simple recipe for lunch which is nice when put togther just before eating.

• 4 tbsp mayonnaise
• 1 tsp wasabi paste
• 400g firm tofu, sliced
• Vegetable oil 
• 4 slices flat bread
• 1 carrot, peeled and thinly sliced lengthways
• 1 cucumber, thinly sliced lengthways
• ¼ red capsicum julienne cut
• 100g snow pea sprouts
• 2 tbsp pickled ginger

Preheat a barbecue or grill to high. Mix mayonnaise and wasabi together. Drizzle tofu with a little oil and grill to heat through. Lay bread out and spread with mayonnaise. Layer carrot, cucumber, tofu, avocado, sprouts and top with ginger before wrapping up the flat bread and finishing on the barbecue for one minute each side before serving.

Thanks to the wasabi mayo, it’s extremely tasty. This can be made in bulk and kept in a glass jar in the fresh for use repeatedly.

Oh! You don’t have to limit yourself with having these wraps at home only. They are perfect for work but what I normally do is to pack all the vegetables in a plastic sandwich bag or container and take it to work. Sneak over to the kitchen for couple of minutes to freshly create the tofu wrap within couple of minutes.

Tip: tofu can be marinated in any sauce of your choice if you like it spicy or more flavorsome. Satay sauce, sweet and sour chilli sauce go really well for marinating  tofu.
